Western Slope Apple Cider Pork Chops

Colorado's Western Slope grows serious apples come fall, and a reduced cider pan sauce is the easiest way to put them to work on a weeknight — the whole dish comes together in one skillet.

Method

  1. Sear the chops

    Season the pork chops with salt and pepper. Heat the oil in a large skillet over medium-high heat and sear the chops 3–4 minutes per side until deeply browned. Remove and set aside.

  2. Soften the onion

    Add the butter to the same skillet and cook the onion for 4–5 minutes until softened.

  3. Add apples and cider

    Add the apple wedges and cook 2 minutes, then pour in the cider and thyme, scraping up the browned bits from the pan.

  4. Reduce and finish

    Simmer for 6–8 minutes until the cider reduces by half and the apples are just tender. Stir in the vinegar.

  5. Return the chops

    Nestle the pork chops back into the skillet to warm through and coat in the sauce, about 2 minutes, before serving.

Kitchen notes

Honeycrisp or Jonagold apples hold their shape best here. Serve over mashed potatoes or buttered egg noodles to catch the extra sauce.
